RECIPE: Inside-Out Breakfast Sandwich Casserole

This delight formed a layer of biscuit-like bready goodness inside when it baked! I was surprised and thrilled…and it was even better the next day! This is what I did, and am looking forward to making it again this week!

I lined a shallow baking pan with aluminum foil and parchment paper (I don’t allow foil to touch my food).
First I put down the bacon pieces, then sprinkled them with pork rinds, and lastly some parmesan on top.
Next I broke 3 eggs into a bowl, then a couple of good “glops” of full-fat sour cream, and finally shredded some cheese into the bowl as well.
I mixed the eggs, sour cream, and cheese until it was as smooth as possible.
Finally I spread it evenly over the bacon, pork rinds, and parmesan.
I put it in the air fryer oven at 450°F for 10 minutes, then rotated the pan and cooked it for another 7 minutes, until browned and cooked through.
This almost looked too pretty to eat!
This was only part of the casserole but it was quite filling – and delicious!

I was surprised at the “biscuit” inside, and am thinking that the combination of bacon fat, pork rind crumbs, and egg formed it over the meat and beneath the cheesy eggs on top! (And after a night in the fridge, the “biscuit” was even more pronounced after reheating.) The result was very much like a fast-food breakfast sandwich – but inside out :). What a delight!
