RECIPE: Desperation Pizza Crust Pizza

Today I was planning to make a carnivore crust pizza with my last can of chicken. But come time to start, I couldn’t find my chicken anywhere! I was determined, however, to have pizza anyway, so I started tossing stuff in a bowl and mixing it up. Ended up being one of the best of its kind I’d ever had! So I’m sharing what I did, and measurements are approximate (but very close!).

In a bowl I mixed up about ¾c of full-fat small curd cottage cheese and a large egg. I just smashed the bigger curds with the back of my spoon as I mixed, but the result was by no means smooth. Then I hit it with about ¼c each of pork panko, grated parmesan, and unflavored whey protein (mostly for thickening), plus a tablespoon of beef gelatin. I mixed everything in until it was pretty thick, then let it stand for about 10 minutes; it turned into a dough. (Thank you, gelatin!)

After pressing the dough onto a parchment lined baking sheet to about ½” thick I put it the air fryer oven for 10 minutes at 350°F, then slid the paper and crust out of the pan and onto a cooling rack. As it cooled the crust released totally from the paper, and I flipped it over onto a fresh sheet.

Added a very thin schmear worth of sauce to the crust, sprinkled my mozzarella on, and returned it to the AFO for 7 minutes at 450°F.

Once it cooled enough I cut it into 6 slices. The crust was quite tasty and sturdy. This will be my go-to from now on!
