crazy day for eating – ate an Ihop breakfast (eggs benedict on an english muffin, roasted potato cubes), figuring on only a steak for the rest of the day. Because of the carbs in the breakfast I was hungry again by the time my husband got his lunch so his nurse also brought me a tray – tasted delicious for hospital food! It was chicken marsala, roasted zucchini slices, and some little red roasted potatoes. I ignored the seed-oil-based “butter spread” that they consider to be healthy. It wasn’t until about 6½ hours after THAT that I was home and had a chance to eat my steak. Tomorrow before I go back to the hospital I will eat as much protein and fat as I can manage, which I know will last me for HOURS!

Then we came directly home afterward and I had the other serving of my leftover custard from last night. I figure today ended up being one of my (uncommon!) days where I maxed out my carbs.

We ate at Texas Roadhouse today, I got a Roadkill dinner which is a ground steak smothered with onions, mushrooms, and cheese; for my 2 sides I chose mashed potatoes and green beans. I ate all of the meat and the cheese with whatever mushrooms and onions were stuck into it (less than half of them), about 3/4 of my potatoes, and half of my beans. The meal was huge and very filling!
