At least, when Pete and I are home on Sunday we have pizza; most Sundays we pick our grandkids up, take them to church, then out to lunch, and I don’t eat again once we come home.
But today we’re home, and I’m really loving this pizza. I always try a little bit different type of crust each time but now I’m close to my “as good as it gets” goal. This is an 8.5 out of 10 but I already know what I’m going to do next time which will – hopefully! – make that one a 10!
(Yes, the photo is a mess…no, I’m not a photographer…yes, I go for taste rather than style…yes that’s a piece missing from the corner where I took a bite…no, I don’t have any interest in upping my photo game…)
Since I don’t measure anything, these measurements are approximate.
In a bowl I mixed together 2Tbsp psyllium husks & 1Tbsp yeast (for the flavor, not the rise), to which I added a cup of shredded mozzarella and ¼c of shredded parmesan. After tossing everything together I added a whole egg and about ¼c of egg white. When fully combined I pressed it onto a parchment-lined baking pan and baked it in the AFO for 12 minutes at 360°F. (Next time I will bake it a couple of minutes longer.) After giving the crust a few minutes to cool I added my sauce and more cheese, because I like my pizzas best without additional toppings. Usually. After another 10 minutes at 400°F on the air-fry setting, it looked like what you see above.
And it is very very good! I like a chewy – not a risen, fluffy – crust and that’s what I got. I also like it pretty thin – even cracker-like at times, if I’m willing to forego the chewiness. Today though it is thin AND chewy!
Next time? I’m going to omit egg altogether, and add a little inulin to the yeast and psyllium husk mixture with water, using that for my liquid with the cheeses. Maybe, since this is keto rather than carnivore, and I can afford the carbs, I will add a spoonful of my keto flour in with the water too…why not?
Anyway, this is very filling, so half today and half in the fridge for another day – I’m more than satisfied!
