Lovely Buns!

I wanted some nice little buns that I could use with a burger, or toast, or make into a sandwich. I’ve read enough carnivore, keto, and very low carb recipe – and done more than my share of fiddling around in the kitchen – that I had an idea what I would do. And it worked! Beautiful! Golden, lightly crisp outside, fluffy and soft inside, flavor neutral…I was going to write down what I did so I could repeat it in the future. Since I didn’t measure or weigh out any of the ingredients, (I never do) these are my best guesses.

1½c egg whites (from the carton)
½ tsp salt
2 Tbsp Allulose
1½ tsp xanthan gum

Whipped the above together until the white were stiff, but no longer


2 Tbsp nutritional yeast flakes
½c unflavored whey protein powder
½c shredded (not grated) parmesan cheese

Folded these in well.


Made mounds on a parchment lined, then sprayed (MUST SPRAY), baking sheet and baked in a 325°F oven (my Ninja air fryer oven, on the bake setting) for about 14 minutes, until golden and lightly crisp on top, and a light press feels firm, not mushy or wet. Taking a hint from other egg-white-based bread recipes I let it cool in the oven with the door held open a crack by a wooden spoon for about 30 minutes.


I got 10 rolls out of the batch. I didn’t do the math (and probably never will) but I’d count the carbs at right around 1g each. They never did fall or shrink as they cooled, and have so far (2 hours later) maintained their shape and texture. I am quite impressed, this is the first egg-white bread that I have actually enjoyed eating. And they were easy. And I will make them often in the future!

NEXT DAY UPDATE! I stored these in a partially open plastic bag overnight; this morning they were kind of sticky. I will keep them in the fridge from now on. BUT I made toast (my way, sliced in half and fried in butter) with a couple and they were fantastic! VERY crispy, and absorbed lots of butter!
These were SO easy to make, and are SO low in carbs, and so heavily animal-based, that I will be keeping some around for daily deliciousness!
